Cooking Vegetarian and Vegan

For the month of March, I committed myself to a resolution of eating vegetarian. So I thought I would share some of my favorite vegetarian and vegan recipes.

Vegan tteokbokki 떡볶이

If you have read any of my previous posts about Korea, then you know that I absolutely love Korean food. This recipe was pretty authentic and I highly recommend it! It’s a bit spicy and has tons of veggies in it. Super tasty.

Peanut noodles

This particular recipe calls to add sriracha, but I didn’t have any so I just made it without. Either way, it was delicious and easy! I also fried some tofu and added that. I love peanut butter, so this was a must try. I also love Thai food, and this was probably inspired by it. I would suggest to have this as a side dish rather than a main meal though.

Black bean butternut squash stew

This is definitely a staple recipe to have during the winter months. The combination of black beans and butternut squash give the stew a creamy consistency. The recipe calls for an optional pinch of allspice, and I always add it because it definitely changes the flavor and makes it taste more like a comfort food.

Butter tofu

If you like Indian food, you probably have tried butter chicken. I would say it’s a favorite dish of many people. This recipe is fairly simple and creates a similar version of butter chicken, just with tofu instead. I would suggest taking it easy on the onions (I used too much the first time) and frying the tofu first in order for it to have a better texture.

There are many other vegan and vegetarian recipes I have made and liked, but I didn’t want this post to be super long. If you want recommendations, just ask!
